Do you keep the Parmesan Cheese out or do you refrigerate it?

It tends to harden, if you refrigerate it. You are supposed to leave it out, so it maintains its quality.

I refrigerate it, because the label says to refrigerate after opening.

I think it tends to harden, because of the cold, and may dry out some in a frost free refrigerator.

But since I don't really know. I do what the labels says. I'd rather err on the side of caution.

It can depend on your climate too I think as well as instructions on particular variety of parmesan cheese. I keep it well wrapped (double-wrapped) in refridgerator. There are variations I believe in the way it's made which can play a part in the answer.

Its rather funny to see that. I've been using PC for many years, and never noticed that until you said it.

Edit: Sorry, I may be lost. Are we talking about the cheese cheese, or the kind that you put on top of pizza (pre-shreded)?

I've always refrigerated it, so the label says. Besides, keeping it out of the fridge takes the fun out of shaking the lump loose.

get the stuff in a block that you grate youself - infinitely better than than the stuff in a tub.

Well I don't like eating salt on its own either ... just like many herbs. But parmesan cheese makes a tasty additive & adds that bit xtra that can really make an effective dish. It's a different type of cheese from others & generally used differently. Most cheeses are used differently b/c there's so many varieties & tastes.
