The norm is to use iTunes. However, it can be done using 3rd party programs/utilities. Copy to iPod without iTunes: www.mediamonkey.com is one possibility.
There is also Anapod http://www.redchairsoftware.com/anapod/ and EphPod
If you visit the iPod Forum, you may find mention of other utilities/programs if you do a forum search.

Oh I just realised you're a mac user & I gave you links to windows programs. But again, go to the iPod forum & they can clue you in. There's programs that can extract music from iPod for mac, so I presume they can also add them. I don't know. Have a look at the sticky here How to transfer music to my iPod (& iTunes) for mac users
