Can't open LimeWire... vanishes from Dock
I've downloaded and installed the program but when I open it it's still saying "Double-click to install LimeWire" instead of offering me the option to run the program. When I open it the LimeWire icon pops up in my dock for a second and then vanishes immediately, to be replaced by the installer icon.

Which OSX version are you running? Actually it will be best if you can answer the questions listed here System details - help us to help you (click on blue link)
First thing to try should be a SAFE Boot & Repair Permissions BTW I decided to move your thread as it's more of a Mac OSX installation issue.
