How do I or can I unshare the temp folder?

Just ****es me off that some else is DL the file from me faster than I can receive it. It seems to corrupt my download...

no need, it doesn't share your temp folder. But it allways shares your download folder (and partials for Xolox clients, which know how to handle), Gnutella means sharing.
